Stuffed Meatloaf

This isn’t your moms meatloaf!!   What do you do when you have picky eaters that won’t touch a meatloaf?  Add cheese and bacon!!!  My pickiest eaters swallowed this down!  A very simple recipe that you can customize to your family’s tastes.  Prep is easy and fast.


Ingredients

  • 2 Pounds
    Ground beef (I use ground chuck)
  • 1 package
    McCormick Seasoning Mix, Meat Loaf
  • 1 box
    Chicken Stove Top Suffing, Cooked as directed on box
  • 2
    Eggs
  • 1/4 Cup
    Milk
  • 1 Cup
    Shredded cheddar cheese
  • 1/4 Cup
    Mesquite bbq sauce (your favorite brand)
  • 1/2 Pound
    Bacon

Instructions

  1. Preheat oven to 350°

  2. In a large bowl, combine ground beef, seasoning packet, eggs, milk and cooked stuffing.

  3. Take 2/3 of meat mixture and shape a loaf, pressing into the center to create a "bowl" for the cheese. Place all the cheese inside. Take the remaining mixture and cover cheese, making sure the sides are all sealed.

  4. Cover with BBQ sauce and lay strips of bacon over entire loaf tucking ends of bacon under the loaf, so they don't curl while baking.

    I use a roasting pan so the loaf doesn't sit in the grease and the bacon has a chance to crisp up.

  5. Bake for 1.5 hours at 350°
